How to make homemade white chocolate?

Have you always dreamed of making your own white chocolate like real chocolatiers? Then here is our recipe for creamy and natural white chocolate with no added additives.

Ingredients and equipment needed

To make high-quality homemade white chocolate , you will need the following ingredients and equipment:

  • Equipment :
    • 1.5 liter grinder
    • Plastic cooking scraper
    • Plastic cooking spatula
    • Microfiber cleaning towel
    • Heat gun, 1500 watts (optional)
    • Kitchen food scale
  • Ingredients :
    • Cocoa butter
    • Cane sugar
    • Milk powder

Homemade White Chocolate Recipe

The recipe we use to make our homemade white chocolate is as follows:

  • 35% cocoa butter
  • 35% milk powder
  • 30% sugar

We will make 1 kilogram (1000 grams) of white chocolate, which translates to:

  • 350 grams of cocoa butter
  • 350 grams of milk powder
  • 300 grams of sugar

This recipe produces a white chocolate that isn't overly sweet, which is our goal. While white chocolate is generally considered a "sweet," we prefer to avoid making it too sweet.

Manufacturing steps

Step 1: Prepare the base mix

Start by adding about half of the cocoa butter (150 grams) and all of the sugar (300 grams) to the grinder. Start the grinder and let it run for 12 to 24 hours. This will reduce the sugar crystals to a very fine particle size, usually less than 20 microns.

Meanwhile, you can use the scrapers and heat gun (optional) to make sure all the sugar and cocoa butter are well incorporated and evenly blended.

Step 2: Add the rest of the ingredients

Once the base mixture is sufficiently refined, add the remaining cocoa butter (200 grams) and all of the milk powder (350 grams). Continue to operate the grinder, using the scrapers and heat gun (optional) to facilitate the incorporation and refinement of the mixture.

The viscosity of the mixture will become very high at this point. Continue mixing until all ingredients are fully incorporated and blended.

Step 3: Manual tempering

Once the white chocolate is completely refined, you can proceed to manually temper it to give it a smooth, glossy texture. To do this, spread the chocolate on a cold surface (stainless steel, marble, or granite) and gradually reduce its temperature while stirring until it reaches the correct crystalline structure.
